- 1 tbsp butter or olive oil
- Salt and pepper, to taste

Instructions
- Heat a non-stick skillet over medium heat and add butter or olive oil.
- Once the butter has melted or the oil is shimmering, sprinkle the shredded cheese evenly across the skillet.
- Let the cheese melt and bubble for about 30 seconds.
- Crack the eggs on top of the cheese, spacing them slightly apart. Season with salt and pepper.
- Cover the skillet with a lid and cook for 2-3 minutes, or until the egg whites are set, but the yolks are still runny (cook longer if you prefer firmer yolks).
- Carefully slide a spatula under the crispy cheese and eggs and transfer to a plate.
- Serve immediately, garnished with fresh herbs or chili flakes, if desired.
