Description

A fresh and nourishing toast layered with creamy mashed avocado, tangy cottage cheese, juicy tomatoes, and fragrant basil. Perfect for a quick breakfast, snack, or light lunch.

Ingredients

Units Scale
  • 2 slices bread (sourdough, whole grain, or gluten-free)
  • 1 tbsp softened butter
  • 1 large ripe avocado, mashed
  • 1/4 cup cottage cheese
  • 2-4 slices ripe tomato
  • 1 tbsp extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh basil leaves, sliced or torn

Instructions

  1. Toast the bread slices until golden and crisp.
  2. Spread a thin layer of butter over the warm toast.
  3. Top each slice with mashed avocado, spreading evenly.
  4. Spoon cottage cheese over the avocado.
  5. Layer tomato slices on top.
  6. Drizzle with extra virgin olive oil.
  7. Season with salt and black pepper.
  8. Finish with torn or sliced basil leaves and serve immediately.

Notes

  • Use very ripe avocado for the best creamy texture.
  • Try cherry tomatoes or heirloom tomatoes for extra flavor variation.
  • Add chili flakes or hot honey for a spicy-sweet twist.
  • To make vegan: swap cottage cheese for hummus and skip butter.
