- 5 baking potatoes
Garlic Herb Coating:
- 2 tbsp garlic olive oil
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp salt
Dipping Sauce:
- 3 tbsp mayo (vegan or regular)
- 1 tsp water
- 1 tsp olive oil
- 1 tsp chili flakes
- 1 tsp dried oregano
- 2 tbsp fresh chopped dill
Instructions

Prepare the potatoes:
- Peel the potatoes and trim the ends to form a rectangular shape.
- Slice into 2-3cm thick pieces.
- Place chopsticks on either side of each slice, then score diagonal lines from top to bottom. Flip and repeat in the opposite direction to create a crisscross pattern.

Parboil the potatoes:
- Bring a pot of salted water to a boil, then add the potatoes.
- Parboil for 10 minutes, then drain.

Season & bake:
- Preheat oven to 200ยบC (fan).
- In a small bowl, mix the garlic olive oil, thyme, oregano, and salt.
- Arrange the potatoes on a lined baking tray, ensuring they donโt touch.
- Brush generously with the herb oil mixture, then bake for 35 minutes.

Crisp them up:
- Flip the potatoes, brush with any remaining oil, and bake for an additional 5-10 minutes until golden and crispy.

Make the dipping sauce:
- Mix together the mayo, water, olive oil, chili flakes, oregano, and dill.
- Serve alongside the crispy accordion potatoes and enjoy!
