Description
Crispitos are crispy, golden-fried tortillas filled with seasoned ground beef, onions, garlic, and Cheddar cheese. Optional salsa con queso adds extra flavor, making them a perfect appetizer or snack for parties.

- 1 quart vegetable oil, divided, for frying
- 1 onion, chopped
- 1 clove garlic, minced
- 1 pound ground beef
- 1 packet taco seasoning
- 10 flour tortillas
- 1/4 cup salsa con queso, divided, or to taste (optional)
- 2 cups grated Cheddar cheese
- Toothpicks
Instructions
- In a skillet, heat 1 tablespoon of vegetable oil over medium heat. Add chopped onion and minced garlic; cook until softened.
- Add ground beef and cook until browned. Drain excess fat.
- Stir in taco seasoning according to package instructions and remove from heat.
- Lay out flour tortillas and spoon beef mixture onto each tortilla. Top with grated Cheddar cheese and a little salsa con queso if desired.
- Roll tortillas tightly and secure with toothpicks.
- In a deep skillet or fryer, heat remaining vegetable oil to 350°F (175°C). Carefully fry the rolled tortillas in batches until golden brown and crispy, about 2-3 minutes per side.
- Drain on paper towels and serve warm with remaining salsa con queso for dipping.
Notes
- Use fresh cheese for the best melting and flavor.
- Ensure oil is hot enough to prevent soggy crispitos.
- Can be made ahead and baked instead of fried for a lighter version.
- Remove toothpicks before serving.
