Instructions

  1. Cook the Pasta: Begin by boiling a large pot of salted water. Add the shell pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
  2. Sauté the Shrimp: In a large skillet over medium heat, melt some butter. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.
  3. Sauté the Vegetables: In the same skillet, add a bit more butter if needed, and toss in the minced garlic and mushrooms. Cook until the mushrooms are tender and browned, about 5 minutes. Then, add the spinach and sauté until wilted.
  4. Create the Creamy Sauce: Pour in the heavy cream and bring to a simmer. Gradually stir in the grated Parmesan cheese until melted and smooth. Adjust the consistency with reserved pasta water if necessary.
  5. Combine Everything: Add the cooked pasta and shrimp to the skillet, tossing everything together to ensure the pasta is well-coated with the creamy sauce. Cook for an additional couple of minutes to heat through.
