Scale
Shrimp
- 1 pound fresh or frozen shrimp, peeled and deveined
Pasta
- 8 ounces shell pasta
Mushrooms
- 8 ounces button, cremini, or shiitake mushrooms, sliced
Spinach
- 4 cups fresh spinach
Heavy Cream
- 1 cup heavy cream
Garlic
- 3 cloves fresh garlic, minced
Parmesan Cheese
- 1/2 cup grated Parmesan cheese
Butter
- 2 tablespoons butter
Instructions
- Cook the Pasta: Begin by boiling a large pot of salted water. Add the shell pasta and cook according to package instructions until al dente. Drain and set aside, reserving a bit of pasta water.
- Sauté the Shrimp: In a large skillet over medium heat, melt some butter. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add a bit more butter if needed, and toss in the minced garlic and mushrooms. Cook until the mushrooms are tender and browned, about 5 minutes. Then, add the spinach and sauté until wilted.
- Create the Creamy Sauce: Pour in the heavy cream and bring to a simmer. Gradually stir in the grated Parmesan cheese until melted and smooth. Adjust the consistency with reserved pasta water if necessary.
- Combine Everything: Add the cooked pasta and shrimp to the skillet, tossing everything together to ensure the pasta is well-coated with the creamy sauce. Cook for an additional couple of minutes to heat through.
Notes
- Don’t Overcook the Shrimp: Cook until just pink and opaque to avoid a rubbery texture.
- Save Pasta Water: This starchy water is great for adjusting sauce consistency while adding flavor.
- Fresh Ingredients: Use fresh spinach and garlic for the best flavor and nutrition.
- Adjust Creaminess: Feel free to add more or less cream based on your preference for richness.
- Season Generously: Taste and adjust seasoning with salt, pepper, and herbs as needed.
