Description

A rich and creamy no bake chocolate éclair cake layered with chocolate graham crackers, fluffy vanilla pudding filling, and topped with a smooth semisweet chocolate ganache. This chilled dessert is easy to prepare and perfect for gatherings.


Ingredients

  • 3 cups cold milk
  • 2 packages 3.4 ounces each French vanilla instant pudding and pie filling mix
  • 2 1/2 cups heavy cream, divided
  • 3 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1 package 12.2 to 14.4 ounces chocolate graham crackers, divided
  • 8 ounces semisweet chocolate, chopped

Instructions

  1. In a large bowl, whisk together cold milk and French vanilla instant pudding mix for 2 minutes until thickened. Let stand for 5 minutes.
  2. In a separate bowl, beat softened cream cheese and powdered sugar until smooth.
  3. In another bowl, whip 2 cups of heavy cream until stiff peaks form.
  4. Fold whipped cream into the cream cheese mixture, then gently fold into the prepared pudding until fully combined.
  5. Spread a thin layer of filling in a 9×13 inch baking dish. Add a layer of chocolate graham crackers.
  6. Spread half of the remaining filling over the crackers. Add another layer of crackers and spread the rest of the filling evenly on top. Finish with a final layer of crackers.
  7. Refrigerate for at least 4 hours or overnight to allow layers to soften and set.
  8. Heat remaining 1/2 cup heavy cream until warm but not boiling. Pour over chopped semisweet chocolate and let sit for 2 minutes, then stir until smooth.
  9. Spread the chocolate mixture evenly over the top layer. Chill for 30 minutes until set.
  10. Slice into squares and serve chilled.
