  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  • Prepare the Meatballs:

    • In a large bowl, mix ground chicken, breadcrumbs, egg, Parmesan, minced garlic, salt, pepper, and thyme until just combined. Avoid overmixing.
    • Shape the mixture into 1.5-inch meatballs using your hands or a cookie scoop.
  • Sear the Meatballs:

    • Heat olive oil in a large skillet over medium heat.
    • Cook the meatballs until golden brown on all sides, about 6-8 minutes (they will finish cooking in the sauce).
    • Remove from the skillet and set aside.
  • Make the Creamy Mushroom Sauce:

    • In the same skillet, melt butter over medium heat.
    • Add sliced mushrooms and sautรฉ until golden and tender, about 5-7 minutes.
    • Stir in minced garlic and cook for 1 minute until fragrant.
  • Finish the Sauce & Simmer the Meatballs:

    • Pour in chicken broth and bring to a simmer, scraping up any browned bits.
    • Stir in heavy cream, Parmesan, salt, and pepper.
    • Return the seared meatballs to the skillet and reduce heat to low.
    • Simmer for 10 minutes, allowing the meatballs to cook through and absorb the flavors.
