Ingredients

Units Scale

Mushrooms and Aromatics

  • 8 oz fresh mushrooms (cremini, shiitake, or button), sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter

Sauce Components

  • 2 tbsp white miso paste
  • 1/2 cup vegetable broth
  • 3/4 cup heavy cream or plant-based cream

Pasta and Garnish

  • 8 oz pasta of choice (linguine or fettuccine recommended)
  • 2 tbsp fresh herbs (parsley or chives), chopped

Instructions

  1. Prepare the Pasta: Boil pasta in salted water according to package directions until al dente. Reserve 1 cup of pasta water, then drain and set pasta aside.
  2. Sautรฉ the Mushrooms and Garlic: Heat olive oil or butter in a large skillet over medium heat. Add the sliced mushrooms and cook for 6โ€“8 minutes until they release moisture and turn golden brown. Add minced garlic in the last minute and stir until fragrant.
  3. Make the Creamy Miso Sauce: Lower the heat, then stir in white miso paste and vegetable broth until smooth. Slowly pour in the cream while stirring continuously. If sauce is too thick, add reserved pasta water a little at a time to achieve desired consistency.
  4. Combine Pasta and Sauce: Add the cooked pasta to the skillet with the sauce and mushrooms. Toss gently over low heat to coat the pasta well and meld flavors.
  5. Finish with Fresh Herbs: Remove from heat and sprinkle chopped parsley or chives over the top. Serve immediately while warm.

Notes

  • Use high-quality white miso for a balanced salty-sweet flavor.
  • Do not overcook mushrooms; keep them tender and browned.
  • Reserve pasta water to loosen sauce without diluting flavor.
  • Taste before adding extra salt due to misoโ€™s natural saltiness.
  • Add fresh herbs just before serving for brightest flavor and color.
