- 12 oz fettuccini pasta, or spaghetti
- 1 lb boneless skinless chicken breast, cut in half lengthwise
- 1 egg
- 1 Tbsp milk
- 1 cup panko bread crumbs
- 1/2 tsp salt, plus more to salt the water
- 1/8 tsp black pepper
- 2 Tbsp olive oil
- Lemon Cream Sauce:
- 4 Tbsp fresh lemon juice, from 1 large lemon, divided
- 2 Tbsp unsalted butter
- 2 garlic cloves, minced
- 1/4 tsp onion powder
- 2 cups heavy whipping cream
- 1/2 tsp salt
- 1/3 cup parmesan cheese
- 1 Tbsp parsley, optional garnish
Instructions
- Cook the fettuccini pasta according to package directions in salted water. Drain and set aside, reserving a little pasta water for the sauce if needed.
- In a shallow bowl, whisk together the egg and milk. In another shallow bowl, combine the panko breadcrumbs, salt, and black pepper.
- Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture. Heat olive oil in a large pan over medium heat. Cook the chicken for 5-7 minutes per side, until golden brown and cooked through. Remove from the pan and set aside to rest before slicing into strips.
- In the same pan, melt the butter over medium heat. Add the minced garlic and onion powder, and sautรฉ for 1-2 minutes until fragrant.
- Pour in 2 tablespoons of lemon juice and the heavy cream, stirring to combine. Let the sauce simmer for 3-4 minutes until it begins to thicken.
- Stir in the salt, parmesan cheese, and the remaining 2 tablespoons of lemon juice. Adjust the seasoning if needed.
- Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Serve the pasta topped with the crispy chicken strips and a sprinkle of parsley. Enjoy!
Notes
- You can substitute chicken breast with chicken thighs for a juicier option.
- For a lighter version, you can use half-and-half instead of heavy cream.
- Feel free to add a little more lemon juice if you prefer a stronger lemon flavor.
