Description

Creamy Lemon Chicken Pasta is a comforting dish that combines crispy chicken with a rich, velvety lemon cream sauce and fettuccini pasta. Perfect for a cozy dinner with vibrant, tangy flavors.


Ingredients

  • 12 oz fettuccini pasta, or spaghetti
  • 1 lb boneless skinless chicken breast, cut in half lengthwise
  • 1 egg
  • 1 Tbsp milk
  • 1 cup panko bread crumbs
  • 1/2 tsp salt, plus more to salt the water
  • 1/8 tsp black pepper
  • 2 Tbsp olive oil
  • Lemon Cream Sauce:
  • 4 Tbsp fresh lemon juice, from 1 large lemon, divided
  • 2 Tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1/4 tsp onion powder
  • 2 cups heavy whipping cream
  • 1/2 tsp salt
  • 1/3 cup parmesan cheese
  • 1 Tbsp parsley, optional garnish

Instructions

  1. Cook the fettuccini pasta according to package directions in salted water. Drain and set aside, reserving a little pasta water for the sauce if needed.
  2. In a shallow bowl, whisk together the egg and milk. In another shallow bowl, combine the panko breadcrumbs, salt, and black pepper.
  3. Dip each chicken breast into the egg mixture, then coat with the breadcrumb mixture. Heat olive oil in a large pan over medium heat. Cook the chicken for 5-7 minutes per side, until golden brown and cooked through. Remove from the pan and set aside to rest before slicing into strips.
  4. In the same pan, melt the butter over medium heat. Add the minced garlic and onion powder, and sautรฉ for 1-2 minutes until fragrant.
  5. Pour in 2 tablespoons of lemon juice and the heavy cream, stirring to combine. Let the sauce simmer for 3-4 minutes until it begins to thicken.
  6. Stir in the salt, parmesan cheese, and the remaining 2 tablespoons of lemon juice. Adjust the seasoning if needed.
  7. Add the cooked pasta to the sauce and toss to coat. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  8. Serve the pasta topped with the crispy chicken strips and a sprinkle of parsley. Enjoy!

Notes

  • You can substitute chicken breast with chicken thighs for a juicier option.
  • For a lighter version, you can use half-and-half instead of heavy cream.
  • Feel free to add a little more lemon juice if you prefer a stronger lemon flavor.
