- 4 (6 oz) boneless skinless chicken breasts
- Salt and freshly ground black pepper
- 2 Tbsp olive oil (divided)
- 2 tsp minced garlic (2 cloves)
- 1/2 cup low-sodium chicken broth
- 1/2 cup heavy cream
- 2 Tbsp Dijon mustard (I recommend Grey Poupon)
- 1 1/2 tsp chopped fresh thyme
- 1/2 tsp dried sage
- 1 tsp honey
- Fresh parsley, minced (for garnish, optional)
Instructions
- Flatten the chicken breasts to an even 1/2-inch thickness using a meat mallet.
- Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Pat the chicken dry with paper towels and season both sides with salt and pepper.
- Cook the chicken in the hot oil for 5–6 minutes per side, or until the chicken reaches 165°F at its thickest part. Transfer the chicken to a plate and cover with foil to keep warm.
- Return the pan to medium-low heat, add the remaining 1 Tbsp of olive oil, and sauté the garlic until fragrant, about 10 seconds.
- Pour in the chicken broth, add thyme and sage, and let the liquid reduce by half (about 1 minute).
- Stir in the cream and Dijon mustard, letting it simmer for about 1 minute until the sauce thickens slightly.
- Stir in the honey, season with salt and pepper to taste, and serve the chicken with the sauce poured over it. Garnish with minced parsley if desired.
Notes
- If you prefer a stronger Dijon mustard flavor, you can increase the mustard to taste.
- Serve this dish with roasted vegetables or mashed potatoes for a complete meal.
