  • 4 (6 oz) boneless skinless chicken breasts
  • Salt and freshly ground black pepper
  • 2 Tbsp olive oil (divided)
  • 2 tsp minced garlic (2 cloves)
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 2 Tbsp Dijon mustard (I recommend Grey Poupon)
  • 1 1/2 tsp chopped fresh thyme
  • 1/2 tsp dried sage
  • 1 tsp honey
  • Fresh parsley, minced (for garnish, optional)

Instructions

  1. Flatten the chicken breasts to an even 1/2-inch thickness using a meat mallet.
  2. Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Pat the chicken dry with paper towels and season both sides with salt and pepper.
  3. Cook the chicken in the hot oil for 5–6 minutes per side, or until the chicken reaches 165°F at its thickest part. Transfer the chicken to a plate and cover with foil to keep warm.
  4. Return the pan to medium-low heat, add the remaining 1 Tbsp of olive oil, and sauté the garlic until fragrant, about 10 seconds.
  5. Pour in the chicken broth, add thyme and sage, and let the liquid reduce by half (about 1 minute).
  6. Stir in the cream and Dijon mustard, letting it simmer for about 1 minute until the sauce thickens slightly.
  7. Stir in the honey, season with salt and pepper to taste, and serve the chicken with the sauce poured over it. Garnish with minced parsley if desired.

Notes

  • If you prefer a stronger Dijon mustard flavor, you can increase the mustard to taste.
  • Serve this dish with roasted vegetables or mashed potatoes for a complete meal.
