Description

This Creamy Crockpot Chicken Spaghetti is a comforting and easy-to-make dinner that’s perfect for busy weeknights. Tender chicken, creamy sauces, and melted cheese combine with spaghetti for a delicious one-pot meal your family will love!


Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 (10 oz) can Rotel diced tomatoes and green chilies, undrained
  • 4 oz cream cheese, cubed
  • 2 cups shredded cheddar cheese, divided
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 pound cooked spaghetti

Instructions

  • Combine Ingredients:
    • In a slow cooker, combine chicken breasts, cream of chicken soup, cream of mushroom soup, Rotel tomatoes, Italian seasoning, garlic powder, and onion powder.
  • Cook Chicken:
    • Cover and cook on low for 4–6 hours or on high for 2–3 hours, until the chicken is fully cooked.
  • Shred Chicken:
    • Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker.
  • Add Cheese:
    • Stir in cubed cream cheese and 1 cup of shredded cheddar cheese. Cover and cook on low for an additional 15–20 minutes, until the cream cheese is melted and the sauce has thickened slightly.
  • Add Pasta:
    • Stir in the cooked spaghetti until well coated with the sauce.
  • Top and Serve:
    • Sprinkle the remaining 1 cup of shredded cheddar cheese on top. Serve immediately and enjoy!

Notes

  • Add red pepper flakes for a spicy kick.
