Ingredients

  • 1 (3.4 oz) package instant vanilla pudding mix
  • 1 cup whole buttermilk
  • 8 oz whipped topping or freshly whipped cream
  • 1 (16 oz) can crushed pineapple, drained (or 2 x 8 oz cans)
  • 1 (11 oz) can mandarin oranges, drained and divided
  • 1 cup crushed fudge striped cookies, divided

Instructions

  1. In a large mixing bowl, whisk together pudding mix and buttermilk until smooth. Let sit for a few minutes to thicken.
  2. Gently fold in whipped topping until fully combined.
  3. Add drained pineapple, most of the mandarin oranges (reserve some for garnish), and ยพ cup of the crushed cookies. Fold gently to combine.
  4. Refrigerate at least 2 hours or up to 24 hours.
  5. Before serving, top with reserved oranges and remaining crushed cookies.

Notes

  • Best served chilled, and can be made up to a day ahead.
  • Swap in vanilla wafers or graham crackers if you donโ€™t have fudge-striped cookies.
  • To make it more festive, top with maraschino cherries or a drizzle of chocolate syrup.
