Description

This Creamy Chicken Sausage & Tortellini Soup is a hearty and comforting dish with savory chicken sausage, tender vegetables, rich tomato and bone broth base, fresh spinach, and cheese-filled tortellini, finished with parmesan and optional cream for extra indulgence.

  • 1 lb chicken sausage or Italian pork sausage
  • 1 yellow onion, finely chopped
  • 2 celery stalks, finely chopped
  • 2 large carrots, finely chopped
  • 4 garlic cloves, minced
  • 4 tbsp tomato paste
  • 1 tbsp Italian herb seasoning
  • 1 tbsp flour
  • 1/2 cup dry white wine
  • 2 x 16.9 oz Kettle & Fire bone broth
  • 28 oz canned San Marzano tomatoes
  • 4 bay leaves
  • 2 cups fresh spinach
  • 9 oz tortellini
  • 1/2 cup grated Parmesan + more for topping
  • 1/4 cup (optional) heavy cream
  • 1 tsp chili pepper flakes

Instructions

  1. Sauté aromatics: In a large pot, melt butter over medium heat. Add chicken sausage and cook until browned, breaking it into pieces. Add onion, celery, and carrots, cooking until softened, about 5 minutes.
  2. Add garlic and tomato paste: Stir in minced garlic, tomato paste, and Italian herb seasoning. Cook for 1–2 minutes until fragrant.
  3. Create roux: Sprinkle in flour and stir to combine. Slowly add white wine, scraping any browned bits from the bottom of the pot.
  4. Add broth and tomatoes: Pour in bone broth and canned San Marzano tomatoes. Add bay leaves. Bring to a simmer and cook for 15 minutes to develop flavor.
  5. Finish soup: Stir in fresh spinach, tortellini, grated Parmesan, and optional heavy cream. Simmer until tortellini are cooked, about 5–7 minutes. Season with chili flakes, salt, and pepper to taste.
  6. Serve: Remove bay leaves, ladle soup into bowls, and top with extra Parmesan if desired.

Notes

  • Substitute tortellini with gluten-free or whole wheat versions if desired.
  • For a spicier soup, add more chili flakes or a dash of hot sauce.
  • Use pre-cooked sausage for faster preparation.
  • This soup can be stored in the fridge for up to 3 days; reheat gently to avoid overcooking the tortellini.
