Scale
- 2 tbsp unsalted butter
- 1 lb chicken sausage or Italian pork sausage
- 1 yellow onion, finely chopped
- 2 celery stalks, finely chopped
- 2 large carrots, finely chopped
- 4 garlic cloves, minced
- 4 tbsp tomato paste
- 1 tbsp Italian herb seasoning
- 1 tbsp flour
- 1/2 cup dry white wine
- 2 x 16.9 oz Kettle & Fire bone broth
- 28 oz canned San Marzano tomatoes
- 4 bay leaves
- 2 cups fresh spinach
- 9 oz tortellini
- 1/2 cup grated Parmesan + more for topping
- 1/4 cup (optional) heavy cream
- 1 tsp chili pepper flakes
Instructions
- Sauté aromatics: In a large pot, melt butter over medium heat. Add chicken sausage and cook until browned, breaking it into pieces. Add onion, celery, and carrots, cooking until softened, about 5 minutes.
- Add garlic and tomato paste: Stir in minced garlic, tomato paste, and Italian herb seasoning. Cook for 1–2 minutes until fragrant.
- Create roux: Sprinkle in flour and stir to combine. Slowly add white wine, scraping any browned bits from the bottom of the pot.
- Add broth and tomatoes: Pour in bone broth and canned San Marzano tomatoes. Add bay leaves. Bring to a simmer and cook for 15 minutes to develop flavor.
- Finish soup: Stir in fresh spinach, tortellini, grated Parmesan, and optional heavy cream. Simmer until tortellini are cooked, about 5–7 minutes. Season with chili flakes, salt, and pepper to taste.
- Serve: Remove bay leaves, ladle soup into bowls, and top with extra Parmesan if desired.
Notes
- Substitute tortellini with gluten-free or whole wheat versions if desired.
- For a spicier soup, add more chili flakes or a dash of hot sauce.
- Use pre-cooked sausage for faster preparation.
- This soup can be stored in the fridge for up to 3 days; reheat gently to avoid overcooking the tortellini.
