  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish (optional)

Instructions

  • Preheat Oven: Preheat oven to 375ยฐF (190ยฐC).
  • Sautรฉ Onion and Garlic: In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautรฉing for 3-4 minutes until the onion becomes translucent.
  • Combine Ingredients: In a large mixing bowl, combine shredded cooked chicken, uncooked rice, chicken broth, cream of mushroom soup, frozen mixed vegetables, thyme, paprika, salt, and pepper. Stir well to combine all ingredients.
  • Assemble Casserole: Transfer the mixture to a greased 9ร—13-inch baking dish. Spread it evenly and top with shredded cheddar cheese.
  • Bake: Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
  • Serve: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
