- 2 tbsp olive oil (or sundried tomato oil)
- 1 lb (450g) chicken breast, cut into 3/4 โ 1-inch pieces
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup (240ml) chicken stock
- 1 cup (240ml) heavy cream
- 16 oz (450g) gnocchi
- 1 tsp smoked paprika
- 1/3 cup sundried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- 2 cups baby spinach leaves
Instructions
- Sautรฉ Chicken โ In a 12-inch skillet, heat olive oil over medium-high heat. Add chicken, Italian seasoning, salt, and pepper. Cook for 4-5 minutes until golden and fully cooked (internal temp 165ยฐF/74ยฐC). Remove from pan and set aside.
- Make the Sauce โ In the same pan, melt butter and sautรฉ garlic for 30 seconds. Deglaze with chicken stock, scraping up browned bits for flavor.
- Cook the Gnocchi โ Add heavy cream and gnocchi, letting it simmer for 5 minutes until tender and sauce thickens.
- Add Flavor โ Stir in smoked paprika, sundried tomatoes, and Parmesan cheese.
- Finish with Spinach โ Add baby spinach, stirring until wilted. If needed, add a splash of water to loosen the sauce.
- Combine & Serve โ Return cooked chicken to the pan, mix well, and serve immediately.
