Description

Ingredients

  • 1 cup celery, diced
  • 1/2 cup onion, diced
  • 2 cans Campbellโ€™s Cream of Mushroom Soup
  • 3 cups water
  • 1 cup heavy cream
  • 2 cups shredded rotisserie chicken
  • 1 cup uncooked pasta
  • Salt & pepper, to taste
  • 1 tbsp garlic powder
  • Fresh parsley, chopped (optional)

Instructions

  1. Sautรฉ the veggies:

    • In a large pot, sautรฉ the diced celery and onions over medium heat for about 5 minutes, until softened and fragrant.
  2. Add the base ingredients:

    • Stir in Cream of Mushroom soup, water, and heavy cream, mixing well until smooth.
  3. Add chicken & pasta:

    • Stir in the shredded rotisserie chicken and uncooked pasta. Mix well.
  4. Simmer:

    • Let the soup simmer for 10โ€“12 minutes, stirring occasionally, until the pasta is tender.
  5. Season & serve:

    • Add salt, pepper, and garlic powder to taste.
    • Stir in fresh parsley if desired.
    • Ladle into bowls and serve warm!

Notes

  • Swap heavy cream with half & half for a lighter version.
