- 1/4 cup unsalted butter, softened
- 1 package (8 oz) cream cheese, softened
- 2 pounds (about 7 1/2 cups) powdered sugar, divided
- 1 1/2 teaspoons pure mint extract
- Gel food coloring (optional)
Instructions
- In a large mixing bowl with a whisk attachment, beat the butter and cream cheese until fully combined (about 3-4 minutes). Beat in the mint extract.
- Add 7 cups of powdered sugar (reserving 1 cup for later). Mix on the lowest speed until it forms a thick dough. Once combined, increase the mixer speed and beat until fluffy (about 2 minutes).
- Divide the mixture into small bowls if using different colors. Add a small drop of food coloring to each bowl and mix well.
- Cover each bowl and refrigerate for at least 2 hours (or overnight).
- Line 2-3 large cookie sheets with parchment paper and sprinkle generously with reserved powdered sugar.
- Scoop about ยพ teaspoon of mint dough, roll it into a ball, and place it on the prepared baking sheet. Repeat until all the dough is used.
- Using a fork dipped in powdered sugar, gently press into the tops of each mint. Sprinkle with additional powdered sugar and let set uncovered for about 4 hours.
- Once hardened, store in an airtight container in the refrigerator, separating layers with parchment paper if needed.
