  • 3 lb beef roast (chuck or top round)
  • 1 cup fresh or frozen cranberries
  • 1/2 cup balsamic vinegar
  • 1/4 cup honey or maple syrup
  • 1 cup beef broth
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  • Preheat the oven to 325°F (163°C).
  • In a large skillet, heat olive oil over medium-high heat. Sear the beef roast on all sides until browned (about 3-4 minutes per side).
  • Place the roast in a roasting pan or slow cooker.
  • In a bowl, mix balsamic vinegar, honey, beef broth, Dijon mustard, garlic, rosemary, thyme, salt, and pepper. Pour over the roast.
  • Add chopped onions and cranberries around the roast.
  • Cover with foil and bake for 2.5 to 3 hours, or until the beef is tender. If using a slow cooker, cook on low for 8 hours or high for 4-5 hours.
  • Once done, let the roast rest for 10 minutes before slicing. Serve with the cranberry balsamic glaze.
