Description

Cracker Barrel Meatloaf is a classic, hearty dish made with ground chuck, Ritz crackers, vegetables, and a sweet-savory glaze. This copycat recipe delivers the same comforting flavors found at the restaurant, perfect for a family dinner.


Ingredients

  • 1 1/2 pounds ground chuck
  • 2 eggs
  • 1 cup crushed Ritz crackers
  • 1/4 cup milk
  • 1/2 cup finely chopped white onion
  • 1/4 cup finely diced green bell pepper
  • 14.1 ounces diced tomatoes, drained (1 can)
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • Meatloaf Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 teaspoon yellow mustard, 1 teaspoon Worcestershire sauce

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
  2. In a large bowl, combine ground chuck, eggs, crushed Ritz crackers, milk, chopped onion, diced bell pepper, drained diced tomatoes, salt, and black pepper. Mix until well combined.
  3. Shape mixture into a loaf and place in the prepared loaf pan.
  4. In a small bowl, mix ketchup, brown sugar, yellow mustard, and Worcestershire sauce to make the glaze.
  5. Spread glaze evenly over the top of the meatloaf.
  6. Bake in preheated oven for 55–65 minutes, or until meatloaf is cooked through and an internal temperature reaches 160°F (71°C).
  7. Remove from oven and let rest for 5–10 minutes before slicing and serving.

Notes

  • For added flavor, sauté the onions and bell peppers before mixing into the meatloaf.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
  • Serve with mashed potatoes or roasted vegetables for a complete meal.
