- 1 1/2 pounds ground chuck
- 2 eggs
- 1 cup crushed Ritz crackers
- 1/4 cup milk
- 1/2 cup finely chopped white onion
- 1/4 cup finely diced green bell pepper
- 14.1 ounces diced tomatoes, drained (1 can)
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Meatloaf Glaze: 1/2 cup ketchup, 2 tablespoons brown sugar, 1 teaspoon yellow mustard, 1 teaspoon Worcestershire sauce
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a loaf pan.
- In a large bowl, combine ground chuck, eggs, crushed Ritz crackers, milk, chopped onion, diced bell pepper, drained diced tomatoes, salt, and black pepper. Mix until well combined.
- Shape mixture into a loaf and place in the prepared loaf pan.
- In a small bowl, mix ketchup, brown sugar, yellow mustard, and Worcestershire sauce to make the glaze.
- Spread glaze evenly over the top of the meatloaf.
- Bake in preheated oven for 55–65 minutes, or until meatloaf is cooked through and an internal temperature reaches 160°F (71°C).
- Remove from oven and let rest for 5–10 minutes before slicing and serving.
Notes
- For added flavor, sauté the onions and bell peppers before mixing into the meatloaf.
- Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
- Serve with mashed potatoes or roasted vegetables for a complete meal.
