Description

These crispy Crab Cake Egg Rolls combine the best of both worlds—classic crab cake flavors wrapped in a crunchy egg roll shell! Made with lump crab meat, seasoned with Old Bay, and air-fried to perfection, they make the perfect appetizer or snack. Serve them with your favorite dipping sauce for an irresistible treat.


Ingredients

  • 1 lb crabmeat
  • 1/2 cup Ritz crackers, crushed
  • 1/3 cup mayonnaise
  • 1 large egg
  • 1 tsp Old Bay seasoning
  • 1 tbsp fresh parsley, chopped
  • 1/2 tsp Worcestershire sauce
  • 1/2 tbsp lemon juice
  • 6 egg roll wrappers
 
  • 1/2 cup water (for sealing the wrappers)

Instructions

  • Prepare the Filling:

    • In a bowl, whisk together mayonnaise, egg, Old Bay seasoning, lemon juice, parsley, and Worcestershire sauce.
    • Gently fold in the crushed Ritz crackers and crab meat until evenly combined.
    • Cover and refrigerate for 15 minutes to firm up the mixture.
  • Assemble the Egg Rolls:

    • Lay an egg roll wrapper on a cutting board at an angle.
    • Lightly brush the edges with water to help seal the rolls.
    • Place about 3 ounces of crab mixture in the center.
    • Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal.
  • Cook the Egg Rolls:

    • Lightly spray the egg rolls with non-stick cooking spray.
    • Arrange them in an air fryer basket, ensuring they don’t touch.
    • Air fry at 375°F for 10-12 minutes, flipping halfway through, until golden and crispy.

 

  • Serve & Enjoy:

    • Let the egg rolls rest for 5 minutes before serving.
    • Pair with your favorite dipping sauce, such as remoulade or spicy mayo.

Notes

  • For extra crispiness, brush the egg rolls lightly with oil before air frying.
  • If you don’t have an air fryer, bake at 400°F for 15-18 minutes, flipping halfway through.

 

  • Serve with lemon wedges for a fresh touch.
