1/2 pound ground beef

1 tablespoon olive oil

1 large yellow onion, finely chopped

1 stalk celery, finely chopped

2 medium carrots, diced

3 cloves garlic, chopped

1 (14.5-ounce) can diced tomatoes

6 cups chicken broth (or beef broth for a richer flavor)

1 cup French lentils (lentilles du Puy) or common brown or green lentils

1/2 teaspoon dried thyme

2 bay leaves

1 teaspoon salt

1/4 teaspoon ground black pepper

A few tablespoons chopped fresh parsley, for garnish (optional)
Instructions

Heat a large pot over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5 minutes. Drain any excess fat if needed.

Add olive oil, onions, celery, carrots, and garlic. Cook, stirring occasionally, until the onions are soft and translucent, about 5 minutes. Do not brown; reduce heat if necessary.

Stir in the diced tomatoes (with their juices), broth, lentils, thyme, bay leaves, salt, and black pepper. Bring to a boil.

Cover partially, reduce the heat to low, and simmer until the lentils are tender, 45 to 50 minutes (see note below if using common brown or green lentils).

Remove the bay leaves and discard them.

Use an immersion blender to purée the soup slightly, leaving some texture for a hearty consistency. If you don’t have an immersion blender, blend about 2 cups of the soup in a blender and return it to the pot.

Garnish with fresh chopped parsley if desired and serve hot.
Notes

If using common brown or green lentils instead of French lentils, start checking for doneness around 30 minutes.

For a thicker soup, blend more of the mixture. If it becomes too thick, thin it with a little water or broth.

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months. Reheat on the stovetop, adding broth or water as needed.
