- 1 cup cottage cheese
- 2 large eggs
- 1 tablespoon italian seasoning
- 1/2 cup gluten free all purpose flour
- 1 teaspoon baking powder
- 1 cup shredded mozzarella cheese, divided
- 1/2 cup marinara sauce
- 12 turkey pepperoni slices, chopped into pieces
Instructions
- Preheat oven to 375°F and lightly grease a standard muffin tin.
- In a large mixing bowl, whisk together cottage cheese and eggs until well combined.
- Stir in italian seasoning, gluten free all purpose flour, and baking powder until just combined.
- Fold in 1/2 cup of the shredded mozzarella, marinara sauce, and chopped turkey pepperoni.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about three quarters full.
- Sprinkle the remaining 1/2 cup shredded mozzarella evenly over the tops.
- Bake for 18 to 22 minutes, until the tops are golden and set in the center.
- Allow to cool in the pan for 5 minutes before removing. Serve warm.
Notes
- Blend the cottage cheese first if you prefer a smoother texture.
