Description

This high-protein, no-bake dessert combines creamy cottage cheese, peanut butter, and melted chocolate for a delicious and healthy treat. It’s naturally sweetened with honey and topped with crunchy peanuts for a Snickers-inspired flavor. Perfect for a quick dessert, post-workout snack, or guilt-free indulgence!

Ingredients

Units Scale
  • 16 oz cottage cheese (low-fat, organic preferred)
  • 1/3 cup peanut butter (creamy, unsalted)
  • 1/3 cup honey (or maple syrup/sweetener of choice)
  • 1/3 cup chocolate chips (melted)
  • 1/3 cup peanuts (chopped)

Instructions

  1. Blend the Base: In a medium bowl, blend cottage cheese, peanut butter, and honey until smooth using an immersion blender.
  2. Melt the Chocolate:
    • Toaster Oven Method: Use the “warm” setting.
    • Microwave Method: Heat chocolate in 20-second intervals, stirring in between, until smooth. If too thick, stir in a small spoonful of ghee.
  3. Assemble the Dessert: Evenly divide the blended cottage cheese mixture into individual dessert bowls.
  4. Top it Off: Drizzle melted chocolate over the dessert.
  5. Add Crunch: Sprinkle with chopped peanuts.
  6. Chill & Serve: Refrigerate for 30 minutes before serving.

Notes

  • Storage: Keep leftovers in an airtight container in the fridge.
  • Variations: Try almond butter instead of peanut butter, or swap peanuts for crushed almonds or cashews.
  • Sweetener Options: Maple syrup, agave, or stevia can be used instead of honey.
