Description

This Cottage Cheese and Spinach Crustless Quiche is a delicious, protein-packed dish that combines creamy cottage cheese with nutritious spinach and savory seasonings. A perfect low-carb, high-protein meal that works well for breakfast, brunch, or a light dinner.   • 1 cup cottage cheese
  • 2 cups fresh spinach (chopped)
  • 4 large eggs
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk (any kind)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for sautéing spinach)
  • Fresh herbs (optional, for garnish)

Instructions

  1. Prepare the spinach: Heat olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Remove from heat and let it cool slightly.
  2. Make the quiche filling: In a mixing bowl, whisk together the eggs, cottage cheese, mozzarella cheese, Parmesan cheese, milk, garlic powder, onion powder, salt, and pepper.
  3. Combine spinach and filling: Add the sautéed spinach to the egg mixture and stir to combine.
  4. Bake the quiche: Preheat the oven to 375°F (190°C). Pour the quiche mixture into a greased pie dish or quiche pan. Bake for 30-35 minutes, or until the quiche is set and lightly browned on top.
  5. Serve: Let the quiche cool slightly before slicing. Garnish with fresh herbs if desired and serve warm.

 


Notes

  • For extra flavor, you can add sautéed mushrooms or onions to the filling.
  • If you prefer a firmer quiche, you can add a bit more cheese or reduce the amount of milk.
