  • 2 boneless, skinless chicken breasts, diced

  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup diced bell peppers (optional)
  • 1/4 cup green onions, chopped
  • 1/4 cup soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp red pepper flakes (optional)
  • 2 tbsp fresh cilantro, chopped (for garnish)

Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced chicken, season with salt, pepper, and smoked paprika, and cook until golden brown and fully cooked. Remove and set aside.
  • In the same skillet, melt butter and sautรฉ garlic for 1 minute until fragrant.
  • Add corn and bell peppers, cooking for 2-3 minutes until slightly softened.
  • Stir in soy sauce, honey, lime juice, and red pepper flakes. Simmer for 1-2 minutes.
  • Return the chicken to the skillet and mix well. Add the cooked rice and toss everything together.
  • Garnish with green onions and fresh cilantro before serving.
