  • 3/4 cup pepperoncini peppers, sliced
  • 1/2 cup red onion, thinly sliced
  • 2 Roma tomatoes, cut into wedges
  • 1 1/2 cups seasoned croutons
  • 1/3 cup shaved Parmesan cheese

Instructions

  • Prepare the Dressing:

    • In a blender or food processor, combine olive oil, mayo, red wine vinegar, lemon juice, sugar, Parmesan, garlic, and Italian seasoning. Blend until smooth.
    • Season with salt and black pepper to taste.
    • Refrigerate for at least 1 hour for flavors to meld.
