- 2 cups (1 pint) full-fat sour cream
- 1/2 cup chopped onion
- 1/2 cup butter, melted
- 2 1/2 cups sharp cheddar cheese, shredded (reserve 1/2 cup for topping)
- 1/4 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, for garnish (optional)
Instructions
- Preheat the oven to 350ยฐF. Lightly grease a 9ร13-inch baking dish with non-stick spray or butter.
- In a large bowl, mix the thawed hashbrowns, cream of chicken soup, melted butter, chopped onions, 2 cups of shredded cheese, sour cream, salt, and black pepper until well combined.
- Transfer the potato mixture to the prepared baking dish, spreading evenly with a spatula.
- Sprinkle the remaining ยฝ cup of shredded cheese over the top.
- Bake uncovered for 45-50 minutes, or until golden brown and bubbly.
