Ingredients

  • 2 tbsp olive oil
  • 1/2 small onion, minced
  • 1 jalapeรฑo, seeded and minced
  • 4 cloves garlic, minced
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1/2 tsp chili powder
  • 1/2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1/2 tsp black pepper
  • 1 tsp kosher salt
  • 8 oz tomato sauce
  • 8 oz water
  • 1 lime, juiced

Instructions

  • Sautรฉ Aromatics:

    • Heat a large skillet over medium heat and add olive oil.
    • Once shimmering, add the onion and jalapeรฑo. Sautรฉ for 4-5 minutes until onions are translucent.
  • Add Garlic & Spices:

    • Stir in minced garlic and cook for about 1 minute until fragrant.
    • Add black beans, chili powder, paprika, cumin, oregano, black pepper, and salt. Stir well to combine.
  • Simmer:

    • Pour in the tomato sauce and stir, bringing it to a boil.
    • Add water, bring to a boil, then reduce heat to low and simmer for about 15 minutes, stirring often.
  • Finish & Serve:

    • Stir in lime juice, adjust seasoning if needed, and serve warm.

Notes

  • For extra flavor, replace water with vegetable or chicken broth.
  • Want it spicier? Leave the jalapeรฑo seeds or add a pinch of cayenne.
