- 12 oz bacon, chopped
- 1 large yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup beer (or substitute with extra chicken stock)
- 1 cup chicken stock
- 2 tablespoons apple cider vinegar
- 2 tablespoons sugar (optional)
- 2 lbs collard greens (chopped, rinsed, and tough stems removed)
- Salt & black pepper, to taste
Instructions
- In a large pot or Dutch oven, cook the bacon over medium-high heat for 5-6 minutes, until crispy.
- Add the onion and garlic, cooking until onions soften (about 4 minutes).
- Pour in the beer, chicken stock, vinegar, and sugar. Bring to a boil.
- Add the collard greens in batches, pressing them down to submerge as they wilt.
- Reduce heat to a simmer, cover partially, and cook for 1 to 1.5 hours, stirring occasionally, until the greens are tender.
- Optional: Transfer to a slow cooker and cook on low for 3-4 hours.
- Season with salt and pepper to taste. Serve warm.

- Swap beer for chicken broth for an alcohol-free version.
