Description

A beautifully marbled loaf cake swirled with rich coffee, warm cinnamon, and deep cocoa tones, balanced by nutty browned butter and soft cream cheese for a moist, aromatic texture.

Ingredients

Units Scale
  • 180 g unsalted butter, browned
  • 200 g granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp vanilla extract
  • 160 g cream cheese, room temperature
  • 220 g all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 4 tsp instant coffee mixed with 2 tbsp hot water
  • 25 g cocoa powder
  • 1 tbsp cinnamon powder

Instructions

  1. Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large bowl, cream browned butter, sugar, and cream cheese until fluffy. Add eggs one at a time, then mix in vanilla extract.
  3. In another bowl, whisk flour, baking soda, and baking powder together. Gradually add dry ingredients to the wet mixture until combined.
  4. Divide the batter in half. To one portion, add dissolved coffee, cocoa powder, and cinnamon powder. Stir until well blended.
  5. Alternate spoonfuls of plain and flavored batters into the pan. Swirl gently with a knife or skewer to create a marble effect.
  6. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean. Cool for 10 minutes, then transfer to a wire rack to cool completely.
  7. Slice and serve with coffee or tea for a warm, cozy treat.

Notes

  • Use room temperature ingredients for a smooth, fluffy batter.
  • Don’t overmix once flour is added to keep the crumb tender.
  • Swirl lightly to maintain defined marble patterns.
  • Cool completely before slicing for clean, neat layers.
