For the Chicken:

  • 1.5 lbs chicken breast, sliced into thin cutlets
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cumin
  • 1 tbsp olive oil

For the Sauce:

  • 1 cup coconut milk (full fat for creaminess)
  • 1/2 cup mango, diced
  • 1/2 cup tomatillos, chopped
  • 1/2 cup chicken broth
  • 1 jalapeรฑo, seeded and chopped (optional for heat)
  • 2 cloves garlic, minced
  • 1/2 tsp ground coriander
  • 1/2 tsp salt
  • Juice of 1 lime
  • 1/4 cup fresh cilantro, chopped

Instructions

  • Season the Chicken: Sprinkle chicken cutlets with garlic powder, salt, pepper, and cumin on both sides.
  • Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
  • Make the Sauce: In the same skillet, add garlic, tomatillos, and jalapeรฑo. Sautรฉ for 3 minutes until softened.
  • Blend: Transfer the tomatillo mixture to a blender. Add mango, coconut milk, chicken broth, coriander, and lime juice. Blend until smooth.
  • Simmer: Pour the sauce back into the skillet and bring to a gentle simmer over medium heat.
  • Return the Chicken: Place chicken back into the sauce and cook for 5 minutes until heated through and coated.
  • Finish & Serve: Garnish with chopped cilantro and serve with rice, quinoa, or roasted vegetables.

Notes

  • Make it Spicier: Add extra jalapeรฑo or a dash of cayenne.
  • Thicker Sauce? Simmer longer or stir in 1 tsp cornstarch mixed with water.
