For the Chicken:
- 1.5 lbs chicken breast, sliced into thin cutlets
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1 tbsp olive oil
For the Sauce:
- 1 cup coconut milk (full fat for creaminess)
- 1/2 cup mango, diced
- 1/2 cup tomatillos, chopped
- 1/2 cup chicken broth
- 1 jalapeรฑo, seeded and chopped (optional for heat)
- 2 cloves garlic, minced
- 1/2 tsp ground coriander
- 1/2 tsp salt
- Juice of 1 lime
- 1/4 cup fresh cilantro, chopped
Instructions
- Season the Chicken: Sprinkle chicken cutlets with garlic powder, salt, pepper, and cumin on both sides.
- Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown. Remove and set aside.
- Make the Sauce: In the same skillet, add garlic, tomatillos, and jalapeรฑo. Sautรฉ for 3 minutes until softened.
- Blend: Transfer the tomatillo mixture to a blender. Add mango, coconut milk, chicken broth, coriander, and lime juice. Blend until smooth.
- Simmer: Pour the sauce back into the skillet and bring to a gentle simmer over medium heat.
- Return the Chicken: Place chicken back into the sauce and cook for 5 minutes until heated through and coated.
- Finish & Serve: Garnish with chopped cilantro and serve with rice, quinoa, or roasted vegetables.

- Make it Spicier: Add extra jalapeรฑo or a dash of cayenne.
- Thicker Sauce? Simmer longer or stir in 1 tsp cornstarch mixed with water.
