- 1 large egg
- 2 tbsp all-purpose flour (or coconut flour for gluten-free)
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil (for frying)
- Fresh lime wedges (for serving)
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C) if finishing the chicken in the oven.
- In a shallow bowl, combine the shredded coconut, breadcrumbs, garlic powder, paprika, salt, and pepper.
- In another shallow bowl, beat the egg.
- Place the flour in a third shallow bowl.
- Dip each chicken breast first into the flour, then into the beaten egg, and finally coat it with the coconut mixture, pressing gently to ensure it sticks.
- Heat olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for 4-5 minutes on each side, until golden and crispy.

- Serve the coconut chicken with lime wedges and garnish with fresh cilantro.
Notes
- For extra crunch, you can use panko breadcrumbs in place of regular breadcrumbs.
- Serve with a tropical dipping sauce or a light honey mustard sauce for an added flavor boost.
- You can also make this recipe with chicken tenders for a quicker cooking time.
