Description

  • 4 boneless, skinless chicken breasts
  • 1 cup unsweetened shredded coconut
  • 1/2 cup breadcrumbs (use gluten-free for a gluten-free version)
  • 1 large egg
  • 2 tbsp all-purpose flour (or coconut flour for gluten-free)
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil (for frying)
  • Fresh lime wedges (for serving)
  • Fresh cilantro, chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C) if finishing the chicken in the oven.
  • In a shallow bowl, combine the shredded coconut, breadcrumbs, garlic powder, paprika, salt, and pepper.
  • In another shallow bowl, beat the egg.
  • Place the flour in a third shallow bowl.
  • Dip each chicken breast first into the flour, then into the beaten egg, and finally coat it with the coconut mixture, pressing gently to ensure it sticks.
  • Heat olive oil in a large skillet over medium heat. Add the coated chicken breasts and cook for 4-5 minutes on each side, until golden and crispy.
  • If the chicken breasts are thick, transfer them to the preheated oven and bake for an additional 8-10 minutes, or until the internal temperature reaches 165°F (74°C).
  • Serve the coconut chicken with lime wedges and garnish with fresh cilantro.

Notes

  • For extra crunch, you can use panko breadcrumbs in place of regular breadcrumbs.
  • Serve with a tropical dipping sauce or a light honey mustard sauce for an added flavor boost.
  • You can also make this recipe with chicken tenders for a quicker cooking time.
