- 4 eggs
- 1/2 cup sugar
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- A pinch of salt
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a round cake pan.
- Separate the egg whites from the yolks. In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.
- In another bowl, beat the egg yolks and sugar until pale and fluffy. Add the milk, oil, and vanilla extract, and mix well.
- Sift the flour and baking powder into the egg yolk mixture and gently fold to combine.
- Gradually fold the beaten egg whites into the batter, being careful not to deflate them.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Once cooled, dust the top with powdered sugar.
Notes
- For a citrus twist, add a teaspoon of lemon zest to the batter.
- Serve with fresh berries or a dollop of whipped cream for an extra touch.
