Ingredients

Units Scale
  • 3 pounds chicken wings, split into flats and drumettes, tips removed
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Vegetable oil for frying (if frying)
  • Buffalo Sauce:
  • 1/2 cup hot sauce
  • 1/3 cup unsalted butter, melted
  • 1 tablespoon white vinegar
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)
  • BBQ Sauce:
  • 1 cup BBQ sauce
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Honey Garlic Sauce:
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon fresh ginger, grated
  • Red pepper flakes to taste
  • Sesame seeds for garnish

Instructions

  1. Preheat oven to 425 degrees F and line a baking sheet with foil and a wire rack, or heat vegetable oil to 375 degrees F if frying.
  2. Pat chicken wings completely dry with paper towels.
  3. In a large bowl toss wings with baking powder, salt, black pepper, garlic powder, and paprika until evenly coated.
  4. If baking, arrange wings in a single layer on the rack and bake for 40 to 45 minutes, flipping halfway through, until golden and crispy.
  5. If frying, cook wings in batches for 8 to 10 minutes until crispy and cooked through. Drain on paper towels.
  6. For buffalo sauce, combine hot sauce, melted butter, white vinegar, Worcestershire sauce, garlic powder, and cayenne in a saucepan over medium heat. Stir until smooth.
  7. For BBQ sauce, combine BBQ sauce, honey, apple cider vinegar, smoked paprika, and garlic powder in a saucepan and heat until warmed through.
  8. For honey garlic sauce, melt butter in a saucepan, add garlic and cook briefly. Stir in honey, soy sauce, rice vinegar, sesame oil, ginger, and red pepper flakes. Simmer until slightly thickened.
  9. Toss hot wings in your desired sauce until evenly coated.
  10. Garnish honey garlic wings with sesame seeds and serve immediately.

Notes

  • Use baking powder only, not baking soda, for crispy skin.
  • Always pat wings dry before seasoning.
  • Toss wings in sauce just before serving to maintain crispness.
  • Reheat leftovers in the oven at 400 degrees F to restore texture.
