Description

Soft, spiced breakfast squares made with cinnamon cereal and topped with creamy Greek yogurt, fresh berries, and a drizzle of honey. These Cinnamon Breakfast Squares are the perfect mix of cozy and refreshing for your morning routine.


Ingredients

  • 1 cup Honey Bunches of Oats Morning Energy Cinnamon Crunch cereal
  • 1/3 cup whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 3 large eggs
  • 1/2 cup nonfat milk
  • 2 tablespoons melted butter, cooled
  • 1 teaspoon vanilla extract (optional)
  • 6 ounces Greek yogurt
  • 3 cups fresh berries (blackberries, raspberries, blueberries, strawberries, or mix)
  • Honey for drizzling
  • Nutmeg or cinnamon for sprinkling

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking dish.
  2. In a bowl, combine cereal, flour, baking powder, salt, sugar, and cinnamon.
  3. In another bowl, whisk eggs, milk, butter, and vanilla until smooth.
  4. Combine wet and dry ingredients, stirring gently until just mixed.
  5. Pour batter into the baking dish and spread evenly.
  6. Bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Cool slightly before cutting into squares.
  8. Top each square with Greek yogurt, fresh berries, and a drizzle of honey.
  9. Sprinkle nutmeg or cinnamon on top before serving.

Notes

  • Don’t overmix the batter to keep the texture tender.
  • Top just before serving to keep the squares from getting soggy.
