- 1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 1/4 cup fresh cilantro, finely chopped
- 3 tablespoons lime juice (about 2 limes)
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Lime wedges, for serving
Instructions
- In a medium bowl, whisk together cilantro, lime juice, olive oil, garlic, cumin, smoked paprika, chili powder, salt, and black pepper.
- Add chicken cubes to the marinade, toss to coat, and cover. Refrigerate for at least 30 minutes (up to 2 hours for best flavor).
- Thread marinated chicken onto skewers.
- Preheat air fryer to 380°F (193°C). Lightly grease the basket with cooking spray.
- Arrange skewers in a single layer in the basket. Air fry for 10–12 minutes, turning halfway, until chicken reaches 165°F (74°C).
- Serve warm with lime wedges and extra cilantro if desired.
Notes
- If using wooden skewers, soak them in water for at least 20 minutes before threading the chicken to prevent burning.
- For extra flavor, add bell peppers, onions, or zucchini to the skewers.
