Description

  • 1/2 French baguette, sliced into 12 half-inch rounds
  • 2 tablespoons butter, divided
  • 1/4 cup cinnamon sugar (or 1/4 cup granulated sugar + 1 tsp cinnamon)
  • Ice cream or frozen yogurt (your choice of flavor)

Instructions

  1. In a bowl, whisk together eggs, milk, sugar (if using), cinnamon, and vanilla.
  2. Heat 1 tablespoon of butter in a skillet over medium heat.
  3. Dip baguette slices in the egg mixture, coating both sides quickly.
  4. Cook in the skillet for 2–3 minutes per side until golden and cooked through. Repeat with remaining butter and slices.
  5. While warm, roll each slice in cinnamon sugar until coated.
  6. Let the slices cool slightly. Scoop ice cream onto one slice and top with another to make sandwiches.
  7. Serve immediately or freeze for 30 minutes to firm before serving.
