- 1/4 cup milk

- 1/2 French baguette, sliced into 12 half-inch rounds
- 2 tablespoons butter, divided
- 1/4 cup cinnamon sugar (or 1/4 cup granulated sugar + 1 tsp cinnamon)
- Ice cream or frozen yogurt (your choice of flavor)
Instructions
- In a bowl, whisk together eggs, milk, sugar (if using), cinnamon, and vanilla.
- Heat 1 tablespoon of butter in a skillet over medium heat.
- Dip baguette slices in the egg mixture, coating both sides quickly.
- Cook in the skillet for 2–3 minutes per side until golden and cooked through. Repeat with remaining butter and slices.
- While warm, roll each slice in cinnamon sugar until coated.
- Let the slices cool slightly. Scoop ice cream onto one slice and top with another to make sandwiches.
- Serve immediately or freeze for 30 minutes to firm before serving.
