Scale
- 1 box yellow cake mix
- 1 (8 oz) package cream cheese, softened
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract (optional)
- 1/4 cup powdered sugar, for rolling
Instructions
- Preheat Oven and Prepare Baking Sheets:
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
- Mix the Dough:
- In a large bowl, combine the cake mix, softened cream cheese, softened butter, egg, vanilla extract, and almond extract (if using). Mix until smooth and well combined. The dough will be thick and sticky.
- Chill the Dough:
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes to make it easier to handle.
- Shape the Cookies:
- Once chilled, scoop the dough into tablespoon-sized balls and roll them in powdered sugar. Place the coated dough balls on the prepared baking sheets about 2 inches apart.
- Bake the Cookies:
- Bake for 8–10 minutes, or until the edges are set and slightly golden. The center will remain soft and gooey.
- Cool and Serve:
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a colorful twist, add a few drops of food coloring to the dough before chilling and rolling.
- These cookies freeze well! Store them in an airtight container or freezer bag for up to 3 months.
