Instructions
- Prepare the Filling: Begin by cooking the chorizo in a skillet over medium heat until browned. Once cooked, remove it from the pan and set aside. In the same pan, add sliced onions and cook until caramelized, about 10-15 minutes. Add cooked pumpkin and chorizo back to the pan and mix well to combine.
- Prepare the Pastry: Roll out your puff pastry on a floured surface. Cut into circles or squares, depending on your desired shape for the hand-pies. Make sure the pieces are large enough to hold the filling without tearing.
- Fill the Pastry: Place a generous scoop of the chorizo, pumpkin and caramelised onion filling in the center of each pastry piece. Be careful not to overfill to avoid any spillage during baking.
- Seal the Hand-Pies: Fold the pastry over the filling to create a pocket and press the edges together to seal. Use a fork to crimp the edges for a decorative touch and to ensure they are sealed properly.
- Bake: Preheat your oven to 400ยฐF (200ยฐC). Brush the tops of the hand-pies with egg wash for a beautiful golden finish. Bake for 20-25 minutes or until golden brown and puffed up.
