Description

Hearty breakfast burritos filled with spiced chorizo, fluffy eggs, melted cheese, and vegetables wrapped in a warm tortilla.


Ingredients

  • 1/2 pound chorizo
  • 6 large eggs
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onion
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat skillet over medium heat.
  2. Beat eggs with salt and pepper.
  3. Add olive oil to skillet.
  4. Cook chorizo, add vegetables, then eggs and scramble. Stir in cheese.
  5. Cook until eggs are set but soft.
  6. Warm tortillas and fill.
  7. Roll and serve warm.
