- 1/2 pound chorizo
- 6 large eggs
- 4 large flour tortillas
- 1 cup shredded cheddar cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onion
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat skillet over medium heat.
- Beat eggs with salt and pepper.
- Add olive oil to skillet.
- Cook chorizo, add vegetables, then eggs and scramble. Stir in cheese.
- Cook until eggs are set but soft.
- Warm tortillas and fill.
- Roll and serve warm.
