- Green onions, 2 stalks
Instructions
- Heat neutral cooking oil in a deep skillet or pot over medium heat.
- In a bowl, whisk the eggs until smooth.
- In another bowl, mix the cornstarch and all-purpose flour.
- Dip the chicken pieces into the eggs, then coat evenly with the cornstarch and flour mixture.
- Fry the chicken in batches for 3 to 4 minutes until golden and crispy. Remove and drain on paper towels.
- In a separate pan, lightly sauté the sliced bell peppers and onion until just tender.
- Add the soy sauce to the vegetables and stir briefly.
- Add the fried chicken to the pan and toss gently until evenly coated.
- Remove from heat, garnish with sliced green onions, and serve hot.
