Description

Chocolate Peanut Butter Crunch Cups are no-bake treats made with creamy peanut butter, crunchy cereal, and rich chocolate. They’re the perfect sweet-and-salty snack or dessert, packed with texture and flavor in every bite.

Ingredients

Units Scale
  • 1 cup creamy peanut butter
  • 1/4 cup honey or maple syrup
  • 2 1/2 cups crispy rice cereal
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 tbsp coconut oil
  • Sea salt, for topping (optional)

Instructions

  1. Line a muffin tin with paper liners.
  2. In a saucepan over low heat, combine peanut butter and honey. Stir until smooth and warmed through.
  3. Remove from heat and gently fold in the crispy rice cereal until well coated.
  4. Spoon the mixture evenly into the muffin liners and press down to create an even base.
  5. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals, stirring between each, until smooth.
  6. Pour melted chocolate over each peanut butter cup and spread evenly.
  7. Sprinkle with sea salt if desired, then refrigerate for at least 1 hour or until set.
  8. Store in the fridge until ready to enjoy.

Notes

  • Use almond butter or sunflower seed butter for a nut-free version.
  • Add chopped peanuts or puffed quinoa for extra crunch.
  • Store in an airtight container in the fridge for up to a week.
