For the Pancakes:
- 1 1/4 cup all-purpose flour
- 1/3 cup Dutched cocoa powder
- 2 tsp baking powder
- Pinch of salt
- 1/3 cup granulated sugar
- 3 tbsp unsalted butter, melted
- 2 eggs
- 1 cup whole milk, warm
- 1 tsp vanilla extract
- 1/2 cup semisweet chocolate chips
For the Chocolate Sauce (Ganache):
- 1 cup semi-sweet chocolate chips
- 1/2 cup heavy whipping cream
Instructions
- Sift Dry Ingredients:
Place a fine mesh sieve over a large bowl. Sift in the flour, cocoa powder, baking powder, and a pinch of salt. Mix the dry ingredients with a whisk and set aside. - Mix Wet Ingredients:
In a separate bowl, whisk together the granulated sugar and melted butter. Add the eggs, warm milk, and vanilla extract. Mix until smooth. - Combine Wet and Dry Ingredients:
Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to over-mix. Stir in the semisweet chocolate chips. Let the batter sit for about 5 minutes. - Cook Pancakes:
Heat a pan over medium-low heat and add a small amount of butter to the center. Use a ¼ cup measuring cup to pour the pancake batter into the center of the pan. Cook for 1-2 minutes, or until the top of the pancake has bubbles and the bottom is golden. Flip carefully with a thin spatula and cook for another 1-2 minutes. Repeat with the remaining batter. - Make the Ganache:
In a saucepan, bring the heavy whipping cream to a simmer. Meanwhile, place the chocolate chips into a heatproof bowl. Once the cream is simmering, pour it over the chocolate chips and stir with a whisk until smooth. - Serve:
