Description

These Chocolate Pancakes are rich, decadent, and loaded with chocolate chips. Topped with a luscious chocolate ganache, this breakfast treat is perfect for chocolate lovers and easy to whip up for a special morning.


Ingredients

For the Pancakes:

  • 1 1/4 cup all-purpose flour
  • 1/3 cup Dutched cocoa powder
  • 2 tsp baking powder
  • Pinch of salt
  • 1/3 cup granulated sugar
  • 3 tbsp unsalted butter, melted
  • 2 eggs
  • 1 cup whole milk, warm
  • 1 tsp vanilla extract
  • 1/2 cup semisweet chocolate chips

For the Chocolate Sauce (Ganache):

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy whipping cream

Instructions

  • Sift Dry Ingredients:
    Place a fine mesh sieve over a large bowl. Sift in the flour, cocoa powder, baking powder, and a pinch of salt. Mix the dry ingredients with a whisk and set aside.
  • Mix Wet Ingredients:
    In a separate bowl, whisk together the granulated sugar and melted butter. Add the eggs, warm milk, and vanilla extract. Mix until smooth.
  • Combine Wet and Dry Ingredients:
    Add the wet ingredients to the dry ingredients and mix until just combined, being careful not to over-mix. Stir in the semisweet chocolate chips. Let the batter sit for about 5 minutes.
  • Cook Pancakes:
    Heat a pan over medium-low heat and add a small amount of butter to the center. Use a ¼ cup measuring cup to pour the pancake batter into the center of the pan. Cook for 1-2 minutes, or until the top of the pancake has bubbles and the bottom is golden. Flip carefully with a thin spatula and cook for another 1-2 minutes. Repeat with the remaining batter.
  • Make the Ganache:
    In a saucepan, bring the heavy whipping cream to a simmer. Meanwhile, place the chocolate chips into a heatproof bowl. Once the cream is simmering, pour it over the chocolate chips and stir with a whisk until smooth.
  • Serve:
    Drizzle the chocolate ganache over the cooked pancakes and enjoy!
