- 3/4 cup semisweet chocolate chips or chopped chocolate (130 grams)
- 1 tablespoon oil
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
- Add the vanilla and egg, mixing until fully combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
- Roll the dough into balls and place them on the prepared baking sheet. Slightly flatten each cookie.
- Bake for 8–10 minutes, then let the cookies cool completely.
- For the frosting, beat the butter until creamy. Add powdered sugar, milk, and mint extract, mixing until smooth. Tint with green food coloring if desired.
- Spread a layer of mint frosting over each cooled cookie.
- For the ganache, melt the chocolate and oil together until smooth. Spoon or drizzle over the frosted cookies.
- Allow the ganache to set before serving.
