Description

  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups powdered icing sugar
  • 1/2 cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • 1/2-1 teaspoon mint extract
  • Green food coloring (optional)
  • 3/4 cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Add the vanilla and egg, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Add the dry ingredients to the wet ingredients and mix until a soft dough forms.
  6. Roll the dough into balls and place them on the prepared baking sheet. Slightly flatten each cookie.
  7. Bake for 8–10 minutes, then let the cookies cool completely.
  8. For the frosting, beat the butter until creamy. Add powdered sugar, milk, and mint extract, mixing until smooth. Tint with green food coloring if desired.
  9. Spread a layer of mint frosting over each cooled cookie.
  10. For the ganache, melt the chocolate and oil together until smooth. Spoon or drizzle over the frosted cookies.
  11. Allow the ganache to set before serving.
