Ingredients
Doughnuts:

4 medium overripe bananas, mashed (about 1 1/4 cups mashed)

1/2 cup creamy peanut butter

1/3 cup pure maple syrup

2 eggs

2 tsp vanilla extract

1 1/2 cups whole wheat pastry flour (or all-purpose flour)

1 1/2 tsp baking powder

1 tsp baking soda

1/2 tsp kosher salt

2 tbsp melted coconut oil
Chocolate Glaze:

2 cups mini chocolate chips, divided

2 tbsp avocado oil
-
1/3 cup milk

Chocolate sprinkles, for decorating

Crushed marshmallows, for decorating
Instructions

Preheat Oven: Set oven to 350ยฐF (175ยฐC). Grease a 6-cup doughnut pan or 12-cup muffin pan with melted butter.

Make the Batter: In a bowl, mix bananas, peanut butter, maple syrup, eggs, and vanilla until well combined. Stir in flour, baking powder, baking soda, and salt. Mix until just combined, then fold in coconut oil.

Bake: Divide the batter evenly into the prepared pan, filling each mold ยฝ to โ full. Bake for 12-13 minutes, or until set. Let cool for 5 minutes, then run a knife around the edges and invert the pan.

Prepare the Glaze:

Glaze 1: Microwave 1 cup chocolate chips and 2 tbsp avocado oil in 30-second intervals, stirring after each, until smooth.

Glaze 2: Microwave 1 cup chocolate chips and โ cup milk in 30-second intervals, stirring after each, until smooth.

Glaze & Decorate: Dip doughnuts into the glaze and decorate with chocolate sprinkles or crushed marshmallows. Enjoy!

These doughnuts can also be made in a muffin pan if you donโt have a doughnut pan.
