Ingredients

Doughnuts:

  • 4 medium overripe bananas, mashed (about 1 1/4 cups mashed)

  • 1/2 cup creamy peanut butter

  • 1/3 cup pure maple syrup

  • 2 eggs

  • 2 tsp vanilla extract

  • 1 1/2 cups whole wheat pastry flour (or all-purpose flour)

  • 1 1/2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp kosher salt

  • 2 tbsp melted coconut oil

Chocolate Glaze:

  • 2 cups mini chocolate chips, divided

  • 2 tbsp avocado oil

  • 1/3 cup milk

  • Chocolate sprinkles, for decorating

  • Crushed marshmallows, for decorating


Instructions

  • Preheat Oven: Set oven to 350ยฐF (175ยฐC). Grease a 6-cup doughnut pan or 12-cup muffin pan with melted butter.

  • Make the Batter: In a bowl, mix bananas, peanut butter, maple syrup, eggs, and vanilla until well combined. Stir in flour, baking powder, baking soda, and salt. Mix until just combined, then fold in coconut oil.

  • Bake: Divide the batter evenly into the prepared pan, filling each mold ยฝ to โ…” full. Bake for 12-13 minutes, or until set. Let cool for 5 minutes, then run a knife around the edges and invert the pan.

  • Prepare the Glaze:

    • Glaze 1: Microwave 1 cup chocolate chips and 2 tbsp avocado oil in 30-second intervals, stirring after each, until smooth.

    • Glaze 2: Microwave 1 cup chocolate chips and โ…“ cup milk in 30-second intervals, stirring after each, until smooth.

  • Glaze & Decorate: Dip doughnuts into the glaze and decorate with chocolate sprinkles or crushed marshmallows. Enjoy!


Notes

  • These doughnuts can also be made in a muffin pan if you donโ€™t have a doughnut pan.
