Description

For the chicken:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 tbsp chipotle in adobo sauce (or chipotle chili powder for a milder option)
  • 1 tbsp lime juice
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper, to taste

For the rice:

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro (optional, for garnish)

Instructions

  • In a small bowl, combine the chipotle in adobo sauce (or chili powder), lime juice, garlic powder, cumin, chili powder, salt, and pepper. Rub the mixture evenly over the chicken breasts.
  • Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side, until fully cooked (internal temperature should reach 165°F / 74°C).
  • While the chicken cooks, prepare the rice. In a medium saucepan, combine the rice and chicken broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  • Once the rice is cooked, stir in the lime juice and chopped cilantro for added flavor.
  • Serve the cooked chicken on a bed of rice and garnish with extra cilantro, lime wedges, or your favorite toppings.

Notes

  • For added flavor, you can marinate the chicken for 30 minutes before cooking.
