- 10 whole chicken wings
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp garlic powder
- 1 tsp sugar
- 1 tsp pepper
- 1 large egg
- 3 tbsp cornstarch, divided
- 2 tbsp flour
- 1 tbsp Shaoxing wine
- 2 tsp salt (or to taste)
- Oil for frying
Instructions
- Marinate the Wings: In a large bowl, mix soy sauce, Shaoxing wine, egg, garlic powder, sugar, pepper, and salt. Add 2 tbsp of cornstarch and flour, mixing well until the wings are evenly coated.
- Rest the Wings: Cover and let the wings sit at room temperature for about 2 hours.
- Prepare for Frying: Just before frying, add the remaining 1 tbsp of cornstarch to the wings and toss to coat.
- Heat the Oil: Preheat the frying oil to 375°F (190°C).
- Fry the Wings: Fry in batches of 3-4 wings, cooking until golden brown and crispy, about 10-12 minutes.
- Season and Serve: Sprinkle with additional salt while hot and serve immediately.
Notes
- For extra crispiness, double-fry the wings by frying for 8 minutes, resting for 5 minutes, then frying for another 4 minutes.
- Serve with a side of sweet chili sauce or soy-based dipping sauce for added flavor.
