Description

  • 1 clove garlic, minced
  • 4 stalks green onions, chopped (reserve 1/4 cup for garnish)
  • 1 medium green pepper, chopped
  • 1/2 teaspoon kosher salt
  • 1 tablespoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 cup mild salsa
  • 1 can chopped green chilies (4 oz)
  • 8 ounces wide egg noodles
  • 1/2 cup sour cream, for garnish
  • 1/2 cup shredded Munster or cheddar cheese, for garnish
  • 1 beefsteak tomato, sliced thin, for garnish

Instructions

  1. Cook egg noodles according to package directions. Drain and set aside.
  2. In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add garlic, green onions, and green pepper to the skillet. Sauté for 3–4 minutes until vegetables are softened.
  4. Stir in kosher salt, chili powder, and cumin. Cook for 1 minute to release the flavors.
  5. Add salsa and chopped green chilies, stirring to combine. Simmer for 5–7 minutes until heated through.
  6. Toss the cooked egg noodles with the beef and chili mixture.
  7. Serve topped with a dollop of sour cream, shredded cheese, reserved green onions, and thin slices of beefsteak tomato.
