- 1 pound 90% lean ground beef
- 1 clove garlic, minced
- 4 stalks green onions, chopped (reserve 1/4 cup for garnish)
- 1 medium green pepper, chopped
- 1/2 teaspoon kosher salt
- 1 tablespoon chili powder
- 1/2 teaspoon ground cumin
- 1 cup mild salsa
- 1 can chopped green chilies (4 oz)
- 8 ounces wide egg noodles
- 1/2 cup sour cream, for garnish
- 1/2 cup shredded Munster or cheddar cheese, for garnish
- 1 beefsteak tomato, sliced thin, for garnish
Instructions
- Cook egg noodles according to package directions. Drain and set aside.
- In a large skillet over medium heat, cook ground beef until browned. Drain excess fat.
- Add garlic, green onions, and green pepper to the skillet. Sauté for 3–4 minutes until vegetables are softened.
- Stir in kosher salt, chili powder, and cumin. Cook for 1 minute to release the flavors.
- Add salsa and chopped green chilies, stirring to combine. Simmer for 5–7 minutes until heated through.
- Toss the cooked egg noodles with the beef and chili mixture.
- Serve topped with a dollop of sour cream, shredded cheese, reserved green onions, and thin slices of beefsteak tomato.

- Use a mix of cheeses for a richer flavor.
- This dish can be made ahead and reheated gently, adding extra sour cream just before serving.
