Description

This Chili Lime Chicken is a vibrant and flavorful dish featuring juicy chicken breasts coated in a zesty chili lime rub. Itโ€™s the perfect balance of smoky, spicy, and tangy, ideal for a quick dinner or meal prep.


Ingredients

  • 1 pound chicken breasts pounded to 1/2 inch thickness
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/4โ€“1/2 teaspoon chipotle chili pepper (optional for more heat)
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon brown sugar
  • Fresh-squeezed lime juice from 1 lime (about 2 tablespoons)
  • Lime zest from 1 lime

Instructions

  1. In a small bowl, combine olive oil, chili powder, chipotle chili pepper, cumin, smoked paprika, onion powder, garlic powder, salt, pepper, brown sugar, lime juice, and lime zest. Stir until well combined.
  2. Rub the chili lime mixture evenly over both sides of the chicken breasts.
  3. Heat a grill or skillet over medium-high heat and cook the chicken for 5-7 minutes per side or until fully cooked and juices run clear.
  4. Remove from heat and let the chicken rest for 5 minutes before slicing.
  5. Serve with a side of rice, veggies, or on top of a salad.

Notes

  • For an extra kick, increase the chipotle chili pepper or add more lime zest.
  • This recipe can also be grilled for a smoky flavor or baked in the oven at 400ยฐF for 20-25 minutes.
