Description

Chili Cheese Dog Casserole is a hearty, family-friendly dish combining bite-sized hot dogs, chili with beans, sautéed vegetables, and a sweet and savory cornbread topping. Perfect for a cozy dinner or potluck.

  • 1 package (8-1/2 ounces) cornbread/muffin mix
  • 1 tablespoon olive oil
  • 1 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1 package (1 pound) hot dogs, halved lengthwise and cut into bite-sized pieces
  • 1 can (15 ounces) chili with beans
  • 2 tablespoons brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat. Add chopped green pepper, onion, and celery; sauté until tender.
  3. Add bite-sized hot dogs to the skillet and cook until lightly browned.
  4. Stir in chili with beans, brown sugar, garlic powder, and chili powder. Mix well and transfer to the prepared baking dish.
  5. Prepare cornbread mix according to package instructions and spread evenly over the chili and hot dog mixture.
  6. Bake in the preheated oven for 25-30 minutes, or until cornbread is golden brown and cooked through.
  7. Allow to cool slightly before serving.
